Today is officially the First Day of Autumn, but it doesn’t feel like fall at all.
No cool crisp air, no leaves changing color, and definitely no person wearing sweaters in this 95*F weather.
Well, what did I expect? I do live in Houston, after all.
I actually am OK with it still being summer, and I’m savoring all of Summer in its last few bites. Ever since the middle of August, the autumn craze has already begun, and while everyone’s screaming “Pumpkin Spice! PSL! Fall!” I’m over here still eating mangoes and putting flowers in my hair. 🌞
And on the first day of fall, I woke up still feeling the summer vibes. After a morning walk, I made a breakfast inspired by the tropics.
A huge turmeric sweet omelet “pancake,” which I had perfectly flipped in the pan and proceeded to shamelessly pat myself on the back for that.
That ^ gets assembled into this v … To see how I assembled this, go find my on Instagram @vivianrtang and watch my Instagram Story!
After beautifully assembling this, I rolled it up and ate it like a Pancake Taco. 😂
Also, it’s not that I dislike fall; I just want it to be fall weather: cool, crisp, breezy while enjoy summer foods: mangoes, strawberries, salads. Basically, I want it to be spring ’16 again. 😂
Anyways, this breakfast happens to be grain-free, paleo, vegetarian, and its recipe is below!
