Recipe! 🌞 A Tropical Breakfast on the First Day of Fall ⊹ Sweet Turmeric Omelet with Mango and Papaya

Today is officially the First Day of Autumn, but it doesn’t feel like fall at all.

No cool crisp air, no leaves changing color, and definitely no person wearing sweaters in this 95*F weather.

Savoring all of Summer in its last few bites (and yes that is a very large mango and a small papaya).

Well, what did I expect? I do live in Houston, after all.

I actually am OK with it still being summer, and I’m savoring all of Summer in its last few bites. Ever since the middle of August, the autumn craze has already begun, and while everyone’s screaming “Pumpkin Spice! PSL! Fall!” I’m over here still eating mangoes and putting flowers in my hair. 🌞

And on the first day of fall, I woke up still feeling the summer vibes. After a morning walk, I made a breakfast inspired by the tropics.

A huge turmeric sweet omelet “pancake,” which I hadΒ perfectly flipped in the pan and proceeded to shamelessly pat myself on the back for that.

After beautifully assembling this, I rolled it up and ate it like a Pancake Taco.Β πŸ˜‚

Also, it’s not that I dislike fall; I just want it to be fall weather: cool, crisp, breezy while enjoy summer foods: mangoes, strawberries, salads. Basically, I want it to be spring ’16 again.Β πŸ˜‚

  • 12 g coconut flour
  • 1/2 tsp baking powder
  • Pinch salt
  • Stevia (or another sweetener) to taste
  • Turmeric (optional, for color)
  • Toppings: fruit, yogurt, nuts, etc.
