Bittermelon Stir-fried with Eggs, SiChuan Pepper, Sweet Peppers, and Onions 苦瓜炒鸡蛋

This is the dish that got me into enjoying the taste of bittermelon! Our homegrown tri-colored bittermelon fresh from the garden, crisp and juicy, stir-fried with sweet peppers, onions, and organic eggs. Recipe below.

I love this particular bittermelon dish because it is the dish that got me into liking the taste of bittermelon. Like most kids, I hated bittermelon as a kid, but this is the dish that got my loving bittermelon as an adult.

I found this dish about a couple years ago, when I was eating dinner at a family friend’s house, and there was this stir-fry egg dish that used Sichuan peppercorns and their fresh-from-the-garden bittermelon. I was hooked!

I then tried a homemade version of the dish, additionally adding sweet peppers and onions, and the two complements the bittermelon perfectly. Adding the egg coats the bittermelon, making the bitter taste a lot more subtle. The Sichuan peppercorn adds a nice tingly taste, and for those who do not know, Sichuan pepper mildly numbs the mouth, and so it goes well with the bittermelon because your tastebuds are tiny bit numb and therefore the bitterness is not as noticeable, hahaha. 😆

SiChuan Pepper Stir-fried Bittermelon, Pepper, Onions, & Eggs 花椒苦瓜炒鸡蛋
Cuisine: Chinese

Serves: 3
Ingredients
  • 3 bittermelon, sliced very thinly
  • 3 eggs, whisked.
  • 1/4 large yellow onion, sliced
  • 3 baby sweet peppers, sliced
  • 1/4 tsp Sichuan pepper
  • 1-2 tsp avocado oil
  • Salt
Instructions
  1. Whisk the eggs. Season with a tiny bit of salt.
  2. Heat wok to high.
  3. Add Sichuan pepper. Fry for a while. Then add the very thinly-sliced bittermelon, onions, peppers. Stir fry until tender.
  4. Add the eggs. Stir-fry to break the eggs apart.
  5. When the eggs are cooked, turn off the heat!
