Crunchy & Refreshing Red Cabbage Slaw

πŸ”₯ Β Too hot to cook? Beat the heat with this crunchy, flavorful, and refreshing red cabbage slaw!

My dorm apartment doesn’t have A/C, and in this heat, it is unbearably hot, which means I’m staying away from the stove. That said, I have a head of red cabbage I need to use up before leaving campus, so I made it into one of my favorite summer dishes: cabbage slaw.

All I do is julienne a whole head of red cabbage and carrots. Then I mix in:

Salt to taste
1-2 tbsp mirin*
1/2 lemon juice
1/2 tsp homemade chili paste**
1/2 tsp sesame oil

Let it sit for at least a couple of hours to marinate.

*If you do not have mirin, you can use rice vinegar or Β white vinegar and add a bit of raw sugar or honey to taste!
**If you do not like spicy food, you can omit the chili paste, but IΒ highlyΒ recommend adding a bit just for a tiny bit of kick.

Yup, no dairy or mayo in this delicious cole slaw! Just a dashΒ of sesame oil for flavor and texture.
