I remember in high school, I brought a tupperware of Strawberry Spinach Salad to school for lunch, and a girl on the other side of the lunch table was like what?! Strawberries on salad?
(I come from Texas… Eating healthy is trendier now, but growing up, it was the strangest thing in the world haha. And in high school, all of my friends ate from the lunch line, which means french fries and country fried steak drowning in gravy for lunch lol. Not my cuppa tea!)
But yes, this combination is soo good! This is my go-to salad when I’m craving something fruity and savory. Strawberries and spinach inherently don’t go together, but it’s the homemade Red Wine vinaigrette that brings the both together. Fruity extra virgin olive oil, tangy red wine vinegar, along with the taste + texture of the fresh strawberries and mild spinach, and, finally, a little crunch from toasted almonds. Yum!!!
When it comes to salad, I never buy bottled dressing. Why would you when it’s SO easy to make your own, tastes fresher, and healthier too?
Normally, I only top the salad with strawberries and almonds, but since it’s VDay, I thought I would try something a little more special and adding some almond milk cheese.
Whole Foods was having a sale on Kite Hill products, which range from yogurts to cheeses, all using almonds! I like their yogurt, and I like the concept of the cheese, but the cheese itself? Well…. it was not bad, but it wasn’t that good either. To be honest, it tasted like tofu to me!! 😡 Which is NOT BAD at all. I LOVE TOFU, but given that the cheese is rather pricey, I’d rather top it with tofu instead.
That said, I haven’t tried their other cheese products yet (like ricotta and cream cheese), so I can’t say no right now.
Anyways, this salad is not just for Valentine’s! I like this salad any day when I’m craving something fruity + savory. Get the recipe below!

Large bowl of organic baby spinach
Red wine vinaigrette: 1 tsp extra virgin olive oil, 2 tsp red wine vinegar, 1/2 tsp honey, s + p to taste
Additional toppings to your liking!
