Some relationships are matured like fine wine and burgundy heart beet brownies.
Others are young and playful like hot pink sweet heart blondies.
In my previous post, I shared the recipe to my Heart-Healthy Heart Beet Brownies. Like the brownies, these blondies deliciously chewy and heart-healthy, but because they don’t contain any cocoa, they bake up into this vibrant hot pink.
To be honest, I did not set out to make hot pink blondies when coming up with this recipe. Pulling these out of the oven was a total surprise but a good surprise. I was SO EXCITED about the blondies’ color! 😍
And then, I bit into one…
Tickled me pink! So delicious. Can’t believe a blondie bar this healthy can be so moist, chewy, and yummy.
Takes me back to simpler times when love was just middle school crushes and secret admirers.

Hot Pink Sweet Heart Blondies
Makes a 9×9 pan of thick blondies
Oat flour: 180 grams (2 cups)
Almond flour: 3 tbsp
Baking powder: 1 tsp
Can of unsalted beets: 8 oz (1 cup)
Organic Cage-Free Eggs: 2
Vanilla: 1 tsp
Almond extract: 1/4 tsp, optional
Honey: 1-2 tbsp (or more)
Stevia: 10 – 15 drops (to taste), or any natural sweetener to taste
Chocolate chips: as much as your heart desires (or 4-5 tbsp)
Mix dry ingredients. Add in chocolate chips to flour.
Blend beets in blender to make puree.
Whisk eggs, beet puree, stevia, honey, extracts together.
Bake at 350*F for 28 minutes.
