Oh my fudging goodness. These brownies.
So good. Fluffy yet fudgy. Intense chocolate flavor.
So healthy. 100% whole wheat, sugar free, virtually fat-free, and ONLY ~45 kcal a piece. 😱😱😱😱😱 (Which means you can eat like half the pan.) VEGAN!
So easy. You only need one bowl to whip up the batter before baking it in the oven.
Point is. These brownies are a win, win, win. SO GOOD, SO EASY, and SO HEALTHY.
I actually came up with this recipe 5 years ago (when taking pictures of your food and sharing it on social wasn’t a thing), and I’m still making them today and also think that these taste better than a typical not-so-healthy brownie. Goes to show that they really do help with those cravings for chewy chocolatey goodness. 😛
And now, I’m giving away the secret to these healthy brownies. (It’s applesauce.) Something about applesauce and cocoa powder together creates the ultimate fudgy healthy brownie. The applesauce replaces the fat, some of the sugar, and makes these brownies so moist and chewy.
- If you want a gluten-free version, click HERE! It’s basically the same thing but uses gluten-free flours that are also whole-grain (oat, sorghum) and a little bit of protein powder to up the protein. The picture below is the gluten-free version.
- If you want an even lower-calorie, low carb, and higher protein brownie, you can even replace 1/3 of the flour with brown rice protein powder.
- I used Hershey’s Special Dark Cocoa Powder. It’s a very dark cocoa powder, which I love because the chocolate flavor is deliciously intense, and it is also why these brownies are so dark in color. You can use regular cocoa powder, but make sure you get unsweetened cocoa.
- Lastly, the only “sugar” I added in these is 1 tsp molasses. The molasses isn’t really for sweetness purposes, but it makes these brownies just slightly fudgier. It’s optional, so if you don’t have molasses, skip it, but I recommend it! It’s a great all-natural sweetener that’s a lot more nutritious than white sugar and even honey. It is high in iron, calcium, potassium, etc.

Whole Wheat Fudge Brownies // sugar-free, fat-free, vegan, whole wheat
Makes an 8×8 pan of brownies, 9 or 16 servings
3/4 cup (90 g) whole wheat pastry flour**
1 tbsp ground flax
5 tbsp unsweetened cocoa powder (extra dark)
2 tsp baking powder, aluminum free
1/2 tsp baking soda
1/2 tsp salt
1 cup unsweetened applesauce
50 g (a bit less than 1/4 cup) unsweetened almond or soy milk
1 tsp molasses
1 tsp pure vanilla
15 drops liquid stevia (or 1/4 cup sugar or sweetener of choice)
4 oz homemade chocolate chunks (or chocolate chips)
Dried fruit (cranberries, etc.)
**As I said before, you can reduce the carbs, calories and up the protein by replacing some of the whole wheat pastry flour with brown rice protein powder. You can go up to 1/2 cup + 2 tbsp (75g) whole wheat flour and 2 tbsp (15 g) brown rice protein powder without compromising the texture.
Preheat the oven to 350*F.
In a large mixing bowl, add the dry ingredients from flour to salt. Then add in your applesauce, milk, molasses, vanilla, and stevia to taste.
If you don’t like stevia or don’t use it, you can add maple syrup / plain old sugar / etc. 1/4 of sugar should do (for my taste).
Fold in any thing you like! Cacao nibs, chocolate chips, walnuts, etc. Fold it in carefully with a spatula and do not overmix. The batter should be thick but pourable.
Prepare an 8×8 brownie pan by lining it with parchment paper and/or greasing it with coconut oil. Pour in your brownie batter to the pan!
Top it with additional stuff. This time I used chocolate chunks and cacao nibs, but since it’s holiday season, maybe try dried cranberries! I’m doing that next time. 😉
Bake at 350*F for 22-25ish minutes until it passes the gold ol’ toothpick test. (Check it at 22.)
