Almond Chocolate Chip Cookies (made with plantains)

You mean, everyday? 😉 Since I’ve developed a number of healthy cookie recipes, everyday can be a cookie day! Woot.

For chocolate chip cookies, I have so many healthified versions, and today I’m sharing my gluten- and grain- free one that is only ~50 kcal for a pretty decent sized cookie. They are also lower in carbs, higher in protein, and sugar-free.Despite all that, you can’t tell these are grain-free, made with flax seed and protein powder, and have no added butter/fat.

The cookies are so soft and chewy with a slight banana 🍌 taste. My little gerbils (aka human taste-testers haha) loved them!

So bring out that inner cookie monster of yours because you’ll definitely be eating more than one of these healthy yet delicious cookies! 🙂

For these grain-free cookies, I use almond flour instead of regular flour. Also known as almond meal,  almond flour is higher in fat / low in carbs, so they replace the need to add additional fat. Despite not having any oil or butter, these cookies are nicely moist and chewy.

I also added some protein powder to replace some of the flour, reducing the amount of carbs and upping the protein.

So these make a great late night dessert because of the higher protein and lower carbs, which maybe Santa will appreciate when he delivers all the goodies? 😉 🎅

For these almond chocolate chip cookies, I have two ways to make them.

One way uses plantains and another bananas. I honestly can’t detect a big difference between the two, but the cookies made with plantains are slightly chewier than the banana ones?

That said, the cookies made with bananas don’t have any eggs in them, so I think it could be easily veganized by replacing the whey protein powder with brown rice protein powder. But! I haven’t tried that yet, so let me know if you do! 🙂

Also, since bananas and plantains are sweet, I can reduce the amount of sugar significantly. I personally don’t find a need to add any sweetener, but sometimes I’ll add some stevia. Then again, I like my sweets to not taste very sweet… 😉 So adjust accordingly!

These are also made with homemade chocolate chips.

🍪 With Plantains (not eggless)

makes 9 – 10 cookies

2.75 oz (78 g) very ripe plantains (about 1/2 large plantain)
1 tsp molasses
1/4 cup (31 g) almond meal
1 scoop (14 g) vanilla whey protein powder (I love tera’s whey)
1 tbsp ground flax
1/2 tsp baking powder, 1/4 tsp baking soda, pinch salt

2.5 tbsp (34 g) egg whites
1/2 tsp pure vanilla
15-20 drops pure liquid stevia (or 1-3 tsp sugar), to taste*

1-2 oz homemade sugar-free chocolate chunks 🍫
1-2 cacao nibs (optional; add only if you love bitter chocolate!)

*Remember that bananas and protein powder are already sweet, so adjust the amount of sweetener to your own tastes.

Preheat the oven to 350*F. Mash the plantains well, add molasses, almond meal, protein powder, flax, baking powder, soda, and pinch salt. Then add the egg whites, vanilla, and stevia or sugar to taste.

The dough should be a bit sticky and not runny. Pide the dough onto a baking sheet lined with silpat or parchment paper.

Bake for 10 minutes. Enjoy almost immediately 😉 with cold glass of (soy)milk.

If making 9 cookies, 1 cookie: 51 kcal; 2f; 5c (1g fiber, 1g sugar); 3p

🍪 With Bananas (eggless, easily veganized)

Same recipe as above, but this one uses banana, which has more water content than plantains and thus is is eggless. For some reason, this made only 5 cookies.

2 oz ripe bananas
1 tsp molasses
1/4 cup (28 g) almond flour
1 scoop (14 g) tera’s whey
2 tsp flax
½ tsp baking powder, 1/4 tsp baking soda, pinch salt
1-2 tsp cacao nibs

1-2 oz homemade sugar-free chocolate chunks 🍫
1/2 tsp pure vanilla
15-20 drops stevia, to taste*

*Remember that bananas and protein powder are already sweet, so adjust the amount of sweetener to your own tastes.

Same directions as above. Bake at 350*F for 10 minutes! 🙂
