It’s already the middle of November, and I still haven’t posted my pumpkin spice granola recipe that I made a month ago! I thought I better post it now before PSL season is over, and flavors of the season turn into mints and hot chocolates again. 😛

Reasons why I love this granola.

  1. There’s actually pumpkin in it. 🎃
  2. No added oils, and it still has those crunchy oat clusters that’s packed with cinnamon, nutmeg, and everything nice. 😉
  3. It is incredibly easy to make.

Usual granola recipes rely on oils and corn syrup to form those oat clusters we all love, but in this recipe, I just use pumpkin to hold the oats together, and they also bake up into yummy clusters! 😛

I love snacking on this granola as is, or topping it with yogurt. I made a pumpkin spice parfait with it + pumpkin spice chai latter, and it was an amazing breakfast.

PSL Granola
makes 4+ cups // vegan, low-fat

3/4 cup (6oz) canned pumpkin
2.8 cups (230g) oats
1 tbsp maple syrup
2 droppers worth of liquid stevia
Pinch salt
Pumpkin spice: 1 tsp cinnamon, 1/2 tsp nutmeg, 1/4 tsp turmeric or ginger
Add-ins: almonds, pumpkin seeds, cranberries, etc.
Mix all the ingredients except for the add-in’s in a bowl. Place the granola mix on a lined baking sheet; I like using those nonstick silicone sheets on top of the baking pan.
Bake at 300*F for 40-45 minutes, or until crisp! If you want to add raw nuts or seeds to the mix, add them 15 minutes before the granola is done, at the 30 minute mark.
