Pumpkin Spice Latte? More like Pumpkin Spice LIFE.
It’s already the middle of November, and I still haven’t posted my pumpkin spice granola recipe that I made a month ago! I thought I better post it now before PSL season is over, and flavors of the season turn into mints and hot chocolates again. 😛
Reasons why I love this granola.
- There’s actually pumpkin in it. 🎃
- No added oils, and it still has those crunchy oat clusters that’s packed with cinnamon, nutmeg, and everything nice. 😉
- It is incredibly easy to make.
Usual granola recipes rely on oils and corn syrup to form those oat clusters we all love, but in this recipe, I just use pumpkin to hold the oats together, and they also bake up into yummy clusters! 😛
I love snacking on this granola as is, or topping it with yogurt. I made a pumpkin spice parfait with it + pumpkin spice chai latter, and it was an amazing breakfast.
makes 4+ cups // vegan, low-fat
2 droppers worth of liquid stevia
Pumpkin spice: 1 tsp cinnamon, 1/2 tsp nutmeg, 1/4 tsp turmeric or ginger
