Quick and easy to make, you’d never guess these flourless chocolate chip pancakes have beans in them! Chickpeas, along with the molasses and vanilla, are what give these pancakes a “cookie dough” taste and texture and an extra boost of protein and healthy carbs.
Imagine a world where you can eat chocolate chip cookies for breakfast and still feel great and satisfied afterwards.

You’d never guess it…, but these beans in here!
I was inspired by all the chickpea blondies and black bean brownies floating around the web, so I thought, hmmm… Beans. Can you pancake it?
And yes. Yes you can.
Surprisingly, the beans are what give these pancakes this awesome “cookie dough” taste and texture, which reminds me of eating a huge stack of chocolate chip cookies, only light and fluffier. A big stack of chocolate chip cookies for a nutritious and healthy breakfast? Who can say no to that?
Chocolate Chip Chickpea Pancakes
Serves 1, makes 4-5 medium pancakes
Gluten free, dairy free, refined sugar free, flourless
½ c drained canned chickpeas, no salt added
½ banana, mashed (save the other half for topping)
1 large egg
1 extra-large egg white
1 tsp coconut flour
2 tsp flax
½ tsp molasses
vanilla and stevia, to taste
¼ oz (1 tbsp) cocoa nibs
dark chocolate chunks: 1 tbsp
Real butter, for cooking
½ banana (saved from the pancake batter mix)
chocolate sauce: 1 tbsp cocoa powder + 1 tbsp almond milk + stevia
cottage cheese: 1 tbsp (optional)
First preheat a nonstick pan to medium to medium-high heat.
In a blender (I used a Magic Bullet), combine the pancake batter ingredients, except for the chunks or chips and cacao nibs. Fold in the chocolate chunks/chips and cacao nibs. Let the batter sit for a couple minutes.
Lightly grease the pan with a bit of butter. Once the pan is hot, do the pancake routine! Flip when bubbles form with a spatula.
Serve immediately! Top with whatever you like. I personally love enjoying these with some banana and my healthy chocolate sauce.
When I got to my last pancake, I thought a pancake sandwich would be fun, so that’s what I made. A little bit of cottage cheese, chocolate sauce, and banana slices. Best last two bites ever!!
